<span style="font-size: large;">適合炒牛柳阿,炒豆芽都很好用,可以保留洋蔥的香味、甜味與嗆辣味,但是洋蔥常常會發生如影片中的狀況,所以對切後檢查一下如果有就先把他挑出來先切過後切出來的洋蔥就很完美了。</span><br />

<span style="font-size: large;">超愛定義東西的我,所以先來定義一下明膠到底是什麼,看一下神通廣大的Wiki百科怎說:</span><br />

<span style="font-size: large;">"明膠又稱魚膠或吉利丁(從英文名Gelatine譯音而來),是一種從動物的骨頭或結締組織提煉出來,帶淺黃色的膠質,主要成分為蛋白質。"</span><br />

<span style="font-size: large;">當我們再滷東西的時候加入了雞腳、豬腳、豬皮、雞冠或者鵝掌之類的,</span><br />
<span style="font-size: large;">作用是幫忙滷汁吃起來更有深度更有口感。</span><br />
<span style="font-size: large;"><br /></span>
<span style="font-size: large;">滷豬腳豬皮的時候皮上會有透明感,這就是明膠,明膠隨然跟膠原蛋白有點不同,但是本質上是差不多的(這邊不做很仔細的講解,有興趣的人可以自行查詢),所以當你吃進人體內後,很有可能合成為膠原蛋白.........</span><br />

<span style="font-size: large;">所以說講了這麼多,就是要說以後滷東西時候,也是可以加入明膠的,絕對是沒有問題的。</span><br />

<span style="font-size: large;">我們常用他來做果凍,各式各樣的果凍當中唯獨你不會看到有人教導,</span><br />

<span style="font-size: large;">答案很簡單因為有些新鮮蔬果裡含著蛋白質分解酵素!(還有很多東西也含有蛋白分解酵素)</span><br />

<span style="font-size: large;">看我用字有沒有抓到我的破綻,為什麼要強調新鮮因為如果你用罐裝鳳梨,</span><br />
<span style="font-size: large;">或者幫這些新鮮水果加熱處理後酵素就被你殺死,他也不會跟蛋白質起了作用。</span><br />

<span style="font-size: large;">你走到賣場,看著琳瑯滿目的調味區,有沒有發現一個叫做"嫩精"的東西,</span><br />

<span style="font-size: large;">看起來就是說,可以讓肉質軟化的東西,聽起來"嫩精"就很不天然一般人也不會想去買,</span><br />
<span style="font-size: large;"><br /></span>
<span style="font-size: large;">而嫩精裡面的成份就是木瓜酵素、鳳梨酵素或者新鮮水果酵素,酵素跟做西點的酵母菌差不多,</span><br />
<span style="font-size: large;">(這裡的差不多不是指蛋白質分解,請大家不要搞混)</span><br />
<span style="font-size: large;"><br /></span>
<span style="font-size: large;">當他們碰水後就開始活化,開始很認真的分解蛋白質然後使得肉質軟化。</span><br />

<span style="font-size: large;">(基本上我不知道他們怎提煉的,我也不知道嫩精好壞,也沒有做廣告嫌疑)</span><br />

<span style="font-size: large;">我們既然知道了這一點,當我們醃製肉類的時候可以加一些,不要的木瓜皮,或者鳳梨心來軟化肉質。</span><br />

<span style="font-size: large;">這邊有個小建議,如果想要吃原汁原味的加木瓜,如果想要有點變化就加鳳梨,因為鳳梨裡面還含有一些酸性物質,可以讓肉的風味有些改變(這又是一堆長篇大論,再這裡不多講)。</span><br />
